this dish was inspired by one of my favorite entrees, squid ink pasta in a coconut cream sauce with scallops, I usually order at @upholsteryfoodwine every time my girlfriend & I dine in the west village when Iām in city visiting her. š
Recipe
ingredients:
4 scallops
8 oz squid ink pasta
1 cup heavy cream
1/2 cup parmesan cheese
1 onion, finely chopped
1 tbsp truffle oil
1 tbsp olive oil
a pinch of black pepper & salt
procedure:
bring water to a boil & cook squid ink pasta for 5-7 minutes
in the meantime add truffle oil to a large frying pan on medium heat & sweat off onion
add heavy cream & parmesan cheese & cook for 2 minutes until sauce thickens
season with black pepper
add olive oil to a small frying pan on high heat. sear scallops on both sides until golden brown & season with salt & black pepper
once the pasta is al dente add it to the sauce & mix everythinng together
plate pasta & sauce with scallops
iss / mange / enjoy!
