it‘s been a minute since my last recipe.. but here’s a brand new creation of mine inspired by a very traditional dish in the israeli cuisine & always a go to of mine when my finacée and I are eating brunch in New York City.

Recipe

ingredients:

3 eggs

1/2 red onion, roughly chopped

1/2 red bell pepper, roughly chopped

1/2 chili, finely chopped

1/2 cup black beans

1/2 tomato sauce

1/2 cup water

a handful of crumbled feta cheese

a pinch of salt, curry, black pepper, & cumin

procedure:

  1. add olive oil into a medium sized frying pan on high heat & sweat off the chopped onions, chili, & pepper for 3 minutes

  2. add the black beans & reduce heat to medium

  3. season to taste & add tomato sauce alongside water into the pan

  4. let it simmer on medium heat for 5-10 minutes

  5. add eggs by creating small creators in the sauce

  6. turn heat down to low & put a lid on top of the pan

  7. let cook for 4-5 minutes for a runny yolk

  8. iss / mange / enjoy!
