minty bliss on a plate

here's my salmon with zucchini pinwheels & mint sauce recipe.


Recipe

ingredients:

1 salmon fillet

1 zucchini

1 lemon

2 tbsp greek yoghurt

1 garlic clove

1 chili

1 tbsp olive oil

handful of mint

a pinch of salt, black pepper, & dill


procedure:

  1. add the yoghurt, juice from half of a lemon, garlic, half of the chili, & a handful of mint leaves into a blender & blend for 30 seconds

  2. use a peeler to peel thin vertical zucchini strips

  3. season the salmon with salt & pepper

  4. in a large frying pan on high heat fry the zucchini strips on each side for about 2 minutes

  5. add olive oil to another large frying pan on high heat. cook the salmon skin side down for 4 minutes. flip & cook for another 3 minutes

  6. place mint sauce on a plate & roll up zucchini strips to form pinwheels & place on top of sauce. put the salmon fillet next to it

  7. use other half of the chili & dill to garnish

  8. iss / mange / enjoy!
