a yummy mouth explosion & an alternative recipe called Baba Ganoush.
Recipe:
ingredients:
1 eggplant
4-6 sprigs of rosemary
1 ts salt
a handful of pomegranate seeds
marinade
1 ts honey
1 tbsp olive oil
1 ts soy sauce
juice of half a lemon
a sprinkle of salt, pepper, & chili flakes
procedure:
preheat oven to 180°C / 360°F
cut eggplant in half
with the tip of a knife, score the flesh deeply in a diamond cross-hatch pattern
sprinkle salt over the flesh & set aside for 15-20 minutes
in the meantime mix together all ingredients for the marinade in a small bowl
take a baking sheet & form two nests with rosemary sprigs
wipe salted eggplant down with a paper towel to get rid of all the exces water
use a brush to put the marinade onto the eggplant & make sure you get into all the cracks & pores
lay the eggplant hals cut side down onto the rosemary nests
bake in the oven for 20-25 minutes
plate with some fresh acidic salad & pomegranate seeds

baba ganoush alternative:
-> when eggplant comes out of the oven, scrape out all the flesh & mash it together with pressed garlic, olive oil, lemon juice, & pomegranate seeds.
