garam cauliflower steak with saffron sauce

Recipe


ingredients cauliflower steak:

1 cauliflower

3 tbsp olive oil

1/2 ts salt

1/2 ts garam masala

1/2 ts curry

1/2 ts chili powder

1/2 ts turmeric

1/2 black pepper


ingredients saffron sauce:

1 cup heavy cream

1/2 cup water

1 small onion, finely chopped

1 bay leaf

1 clove

1 vegetable stock cube

1 lemon

2 ts food starch

1 tbsp olive oil

a pinch of salt, black pepper, & saffron


procedure cauliflower steak:

  1. preheat oven to 150°C / 300°F

  2. cut a 2 cm / 1 inch thick steak from the cauliflower. place steak on a baking tray & marinate both sides with olive oil, salt, garam masala, curry, chili powder, turmeric, & black pepper

  3. roast the steak for 15-20 minutes in the oven

procedure saffron sauce:

  1. place small sauce pan on high heat with the olive oil & sweat finely chopped onion

  2. mix water, vegetable broth, bay leaf, clove, & zest of lemon. let simmer for 5 minutes

  3. mix heavy cream, saffron & food starch together. turn down heat to medium low & stir

  4. continue stirring until sauce thickens, & season to taste with salt & black pepper

  5. strain the sauce with a sieve to get rid of all the chunks in the sauce

  6. serve with the cauliflower steak

  7. iss / mange / eat!
