butternut squash burgers 🍔

it’s burger o’clock here in Switzerland


Recipe


ingredients:

2 1 cm / 0.5 inch slices of butternut squash

a pinch of salt

2 tbsp olive oil

1/2 cup bread crumbs

1/3 cup grated parmesan cheese

a handful of mushrooms

1 red onion

1 small orange pepper

1/2 chili

a pinch of salt, curry, & turmeric

1/3 cup heavy cream

1 endive

1 tbsp cottage cheese

1 ts basil pesto

2 spelt burger buns


procedure:

  1. preheat oven to 180°C / 350°F

  2. drizzle olive oil on butternut squash slices & coat them in bread crumbs & parmesan cheese

  3. bake slices in the oven for 30 minutes

  4. add olive oil to a frying pan on high heat & sweat off mushrooms, onions, chili, & pepper

  5. add heavy cream & splash of water & turn heat down

  6. cook for 1-2 minutes & let veggies cool down on a plate

  7. build your burger with the pesto, cottage cheese, & endive salad

  8. iss / mange / enjoy!
