and so the taco obsession continues.. let it be known that I’m binge watching ‘The History of the Taco’ on @netflix and I miss Mexican food like crazy. 🌮
Recipe
ingredients:
pumpkin & shrimp
1 pumpkin
1 cup of shrimp
1 tbsp olive oil
a pinch of salt, pepper, curry, & chili powder
black beans
1 can of black beans
1 tomato, chopped
1 onion, finely chopped
juice of 1 lime
1 tbsp olive oil
a pinch of salt
piri piri corn
1 can of corn
1/2 cup heavy cream
1 tbsp piri piri hot sauce
procedure:
cut the pumpkin into mouth size pieces. add olive oil to a large frying pan on high heat & cook the pumpkin
season with salt, pepper, curry, & chili powder
add shrimp & cook for another 3-4 minutes
in the meantime add olive oil to a sauce pan & sweat off onion & tomato
add black beans & lime juice & season with a pinch of salt
let the black beans cook for 5 minutes on medium heat
put another small sauce pan on medium heat & add the corn
cook it for 2-3 minutes before adding heavy cream & the piri piri hot sauce
let it simmer on low heat for 5 minutes
put together the taco on a corn tortilla
iss / mange / enjoy!
